This is one of my favorite quick meals because itβs rich in plant protein, fiber, minerals, and blood sugar-friendly carbohydrates.
Ingredients
β’ 1 cup red lentils (masoor dhal), rinsed
β’ 3 cups water or vegetable broth
β’ 1 small onion, finely chopped
β’ 2 cloves garlic, minced
β’ 1 tsp grated ginger
β’ 1 tsp turmeric
β’ 1 tsp cumin
β’ Β½ tsp coriander powder
β’ 1 tomato, chopped (or 1 tbsp tomato paste)
β’ Salt and pepper to taste
β’ 1 tbsp olive oil or ghee
Optional upgrades
β’ Handful of spinach
β’ 1 can coconut milk for creaminess
β’ Fresh cilantro
β’ Squeeze of lemon
Method
Heat olive oil or ghee in a pot.
SautΓ© the onion for 3β4 minutes until soft.
Add garlic, ginger, turmeric, cumin, and coriander. Cook for 30 seconds.
Add the tomato and cook for another minute.
Stir in the lentils and water.
Bring to a boil, then reduce the heat and simmer for 15 minutes, stirring occasionally.
Once creamy, add spinach (if using) and cook for 1 more minute.
Season with salt, pepper, and a squeeze of lemon.
